Dorper Pinotage Rose by Reg Holder of Holder Vineyards and Wines is from a Stellenbosch vineyard. Whole bunch pressed, and naturally settled over night. Racked to tank for the peak of fermentation, for temperature control then racked to older French oak to complete fermentation and left on the lees until end of August. Pale salmon hue. Delicate notes of cherry, strawberry and spice. The palate is fruit forward with an appealing savoury note. Time spent on lees adds weight and balance to the fresh acidity. A wine that will be intriguing in its youth, yet rewarding with age. Alc% 12.49
